Use up some leftover pulled pork in these 10 minute, crunchy, flavorful quesadillas! Just like the traditional cuban sandwich, minus those extra cals.

To be completely honest, I made this recipe by throwing a bunch of random stuff I had in my fridge into a perfectly browned, crunchy little pocket of deliciousness.

You see, I'm not a big leftover person. I'll eat them if I absolutely have to (or they're just THAT good the first time around) but I would really much rather take one hunk of meat and make it into like 5 different meals that taste nothing alike.

If you're anything like me, you'll love this Pulled Pork Cuban Quesadilla. Maybe even enough to make extra and eat 'em for lunch the next day.

Then layer with half of the cheese, ham, pulled pork, pickles and top with another layer of cheese. 3. Fold tortilla in half over layered ingredients and place in the hot skillet.
