PULLED PORK CUBAN QUESADILLAS

Use up some leftover pulled pork in these 10 minute, crunchy, flavorful quesadillas! Just like the traditional cuban sandwich, minus those extra cals.



To be completely honest, I made this recipe by throwing a bunch of random stuff I had in my fridge into a perfectly browned, crunchy little pocket of deliciousness.

You see, I'm not a big leftover person. I'll eat them if I absolutely have to (or they're just THAT good the first time around) but I would really much rather take one hunk of meat and make it into like 5 different meals that taste nothing alike.

If you're anything like me, you'll love this Pulled Pork Cuban Quesadilla. Maybe even enough to make extra and eat 'em for lunch the next day.

Pulled Pork Cuban Quesadillas
A spin on the traditional cuban sandwich, but lighter!
Ingredients
  • 2 Xtreme Wellness Whole Wheat Tortillas
  • 2 tbsp Spicy Brown Mustard
  • 1/4 cup Diced Ham
  • 1 cup Pulled Pork
  • 1/2 cup Shredded Italian Cheese
  • Hamburger Dill Pickle Chips
  • Olive Oil Cooking Spray
Instructions
1. Heat a skillet on the stovetop to medium-high. Spray with non-stick cooking spray. 2. Spread 1 tbsp of the mustard on half of the first tortilla. Then layer with half of the cheese,ham, pulled pork, pickles and top with another layer of cheese. 3. Fold tortilla in half over layered ingredients and place in the hot skillet. Spray cooking spray over the top of the quesadilla. 4. Cook for about 2 minutes, then flip and cook for another 2 minutes or until browned. 5. Repeat all steps with second tortilla and cut into triangles to serve. 6. Top with additional pickles or extra mustard if desired.
